Grilled Zucchini Boats

Zucchini is still abundant in our garden and we’ve found so many delicious ways to enjoy it this year. One of my favorite ways to served zucchini is grilled but I wanted to make a complete meal out of it. I decided to scoop out the center and stuff it full of a delicious tomato
and meat mixture.

Ingredients:

2 medium zucchini
1 lb ground beef
2 TB butter
1 TB dried oregano
1 25 oz. jar of tomato sauce
3 small bell peppers (yellow, orange, and green - chop them up)
1 white onion (diced)
2 garlic cloves (minced)
Fresh herbs of choice (I chose oregano and basil)
1.5 cup cooked rice or quinoa
Parmesan
Olive Oil

Directions:

Prepare zucchini by scooping out the center. You will be filling this with the meat mixture later. Brush with olive oil and season with salt and pepper. Place on a hot grill (around 400°). Keep face down for about 8-10 min. Flip to the other side and grill for another 8-10 minutes or until the fork easily pierces the skin.

While the zucchini is on the grill, get started on your meat filling. On medium heat, add butter to pan and brown onions, garlic, and peppers. Once cooked through, add ground beef and brown. Once meat is cooked sprinkle in dried oregano and salt and pepper to taste. Next, add the tomato sauce, fresh herbs, and cooked rice. Mix together.

Remove cooked zucchini from the grill. Scoop meat mixture into the “boats.” Next you’ll want to shave on some parmesan and cut into
3-4 inch slices. Serve warm and enjoy!
