Cozy Pear French Toast Recipe
The seasons play such a large role in how I create in the kitchen. As the summer comes to an end, I’m ready for cozy & comfortable foods but still enjoy a refreshing feel to my meals. With an expansion of trees in our orchard this year, I’ve been looking forward to creating some more dishes around our fruit. Pears are peak for picking and it was time to get to it in the kitchen and create something delicious. I came up with the idea for a fig & pear french toast and it was everything I wanted and a little more!!!
Ingredients:
French toast:
4 slices sourdough bread
1 c milk
2 eggs
1 tsp vanilla
A few shakes of cinnamon
1 tsp brown sugar (+ a little more for cooking)
Topping:
3 small pears
3 figs
2 TB Walnuts
Chop up pears and figs and sauté in medium heat in some butter or ghee. Mix in chopped walnuts and let simmer for a couple minutes until warmed and liquid has formed around the fruit. Set aside.
Mix the milk, eggs, vanilla, cinnamon and sugar. Let the bread soak in the mixture for a few minutes. Heat skillet and add butter or ghee. Sprinkle some brown sugar on prepared bread and sear. Wait until bread cooks a bit and starts crisping. Flip once. Repeat on second side.
Plate toast, top with pear mixture, drizzle on some syrup and top with powdered sugar for a real treat!
